Quinoa Salad with Orange Dressing

Serves 2-4
2 cups Cooked Quinoa
5 dried apricots, chopped into little cubes
2 tablespoons seedless raisins (small variety)
2 tablespoons freshly chopped coriander
2 tablespoons freshly chopped parsley
2 tablespoons pine nuts, toasted
salt & pepper
Combine salad ingredients.
Dressing:
Juice of one medium Orange
2 tablespoons Olive oil
1 dessert spoon rice wine vinegar or white wine vinegar
1 dessert spoon freshly chopped parsley
a little pepper
Make dressing and pour over salad.
Chill overnight for dried fruit to absorb orange dressing.
Can also be eaten straight away… Too good to resist overnight!
