Spinach & Feta Muffins

Heat oven to 190 degrees celsius.
Line muffin tin with papers.
In a large pan, heat 1 tablespoon olive oil and fry 1 finely chopped red onion on a medium heat until translucent and lightly browned.
Add 300 grams washed and rinsed baby-leaf spinach (a little chopped up is perfect)
Allow leaves to wilt.
Add 1/2 teaspoon cayenne pepper.
Salt & pepper to taste.
Combine dry ingredients;
300grams plain flour (cake)
75grams self-raising
1 teaspoon baking powder
Pinch of salt
Sieve together.
Combine liquid ingredients;
110ml canola/sunflower/coconut oil (whichever you prefer)
110ml milk
1 large egg
Add spinach to dry ingredients.
ADD 250grams feta cheese, cut into 1cm squares.
Stir to combine before adding liquid mixture.
Mix well and spoon into 12 muffin cases.
Bake for 20-25 minutes. Leave to cool a little. Delicious served warm with chilli jam.17522954_1260161360737279_1600855525461048942_n
