Muesli – Crunchy & Nutty

This homemade toasted muesli recipe is a keeper! Super easy and makes a good amount too.
Here’s how:

350g oats
100g dried dates, chopped
50g almonds, roughly crushed/chopped
100g raw cashew nuts
40g raw pumpkin seeds

40ml maple syrup or honey
70ml olive oil

Heat oven to 160 degrees C.
Gently heat maple syrup/ honey &
oil to runny consistency.

Combine all the ingredients.
Spread over baking sheet.
Bake for 15 minutes. Stir and bake for another 15 minutes.

Reduce temperature to 130 degrees and bake for a further 30 minutes; stirring from time to time to avoid burning in hot spots.
Switch oven off and leave to cool in oven with door ajar.

Store in an airtight container
