Spicy Two Bean Burger

A delicious vegetarian alternative.  Lots of protein, lots of fibre. This recipe seems like a lot of hard work, but I promise you… It’s really easy and straight forward.
Makes 4 – 6 burgers
1 onion, roughly chopped
3/4 cup oats
2 garlic cloves, crushed
handful of fresh parsley, stalks removed
handful of fresh coriander, stalks removed
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1/2 teaspoon ground turmeric
1 red chili, finely chopped
1 whole egg
Blend all of the above ingredients in a food processor before adding;
1 tin Cannelleni beans
1 tin Barlotti beans
salt & pepperPULSE processor to ensure beans are roughly chopped.  You don’t want it to become a smooth paste.

Heat a non stick pan on medium heat.
Add a little oil

Mixture is sticky to handle.  I use a metal ring in the pan to shape patties.
Fry on a gentle heat until golden brown.  Turn over.
Once both sides are cooked, place patties on a baking tray and bake in the oven for 8-10 minutes at 180 degrees Celsius.Uncooked mixture can be refrigerated for up to 2 days.
Alternatively, pan fry all the burgers but instead of baking, cool and freeze.
Place in oven from frozen and heat thoroughly.
