Roasted Pumpkin Salad

Serves 1
A beautiful salad; visually and tasty.  Roasted pumpkin with a few added extras to create a work of art.
One handful of fresh Rocket
Add 6 thin slices of oven roasted pumpkin

Add pickled *beetroot & red onion (*cooked beetroot, fresh red onion, vinegar and sugar marinade) or use pickled beetroot in a glass jar
1 heirloom purple carrot, peeled and thinly sliced/shaved
Micro herbs
30 grams of soft goats cheese
1 desert spoon olive oil
juice of half an orange

Arrange your salad. Season to taste.
Combine orange juice and olive oil.
Drizzle over salad and enjoy.
