Cabbage & Two Bean Salad with Apricots

Serves 2 -4

1 small red cabbage, finely sliced
1/2 red onion, finely sliced
100g fine green beans, blanched and sliced
100g purple beans, raw and sliced thinly diagonally
10 ripe apricots, cut into 1/8’s
handful of rocket leaves
micro herbs for garnish

2 tablespoons of Balsamic Vinegar
2 tablespoons olive oil
1 small garlic clove, finely chopped
juice of half an orange
1 teaspoon honey or maple syrup
1 tablespoon of chopped mint

Combine dressing ingredients and spoon over salad before serving
