There is only one word to describe this delicious salad – MOJITO … without the rum!
2 teaspoons spoon castor sugar
1 desert spoon lime juice or lemon juice
1 red chilli, seeded and finely sliced
1/2 teaspoon garlic, crushed
handful fresh watercress
1/4 cup peanuts, roasted and roughly chopped
handful of mint leaves, removed from stem. Approx. 10 small leaves.
2 Shaddock Pomelos/Grapefruits, segmented
For the dressing, combine all the ingredients before adding the grapefruit.
An extra sprinkling of chopped peanuts and a few mint leaves will finish it beautifully.
