Lentil & Tomato Salad

220g cooked brown lentils
1 large heirloom or sun ripened tomato, thinly sliced
4 sundries tomatoes, in oil – sliced
1 small red onion, peeled and finely sliced
1 large handful of fresh parsley, chopped

Mix all of the above together and add Dressing:
50ml Olive oil (lemon flavoured oil makes it a little more special)
20 ml Apple Cider Vinegar
10ml Maple Syrup
Salt & Pepper

Pour over Salad.   I adore this salad spooned into a fresh Pita bread.
