Fennel Coleslaw

Serves 2-4
1 fennel bulb, finely sliced
2 small cabbages, finely sliced
2 tablespoons white wine vinegar
1 dessert spoon maple syrup or honey
salt & pepper
3-4 tablespoons creamy mayo; or full fat yoghurt
2 tablespoons sesame seeds, toasted

Combine all ingredients.  Keep a little helping of sesame seeds aside to sprinkle over the top.
