Rustic Caprese Salad with Pomegranate

I adore the simplicity and freshness of this colourful and aromatic salad. It’s perfect light lunchtime meal.
Add avocado and ciabatta as extra fillings.
Serves 1 main, 2 sides
Arrange on your most loved and rustic plate…
Good handful of any little tomatoes you can get your hands on – washed and halved
1 Buffalo mozzarella or Bocconcini mini mozzarella – torn into chunks or neatly sliced
Fresh Basil leaves (little ones are tender and full of flavour)
Tablespoon of Pomegrante seeds
Drizzle of Olive Oil
Drizzle of Balasmic Vinegar Coarse
Salt & Pepper
