This salad makes for both a pretty, and a super tasty starter or side salad. The dressing is light and cleansing on the palate.
Serves 2 as Starter
handful watercress & rocket leaves
6 medium figs
1 large nectarine
juice of 4 limes
tablespoon freshly chopped mint
teaspoon freshly grated ginger
1 red chilli, finely sliced ( just a little to add a bite )
balsamic vinegar reduction
drizzle of honey
edible flowers to decorate
Slice nectarines into even slices and briefly marinade in lime juice, mint, ginger & chilli.
Place leaves on serving plate.
Halve figs and place amongst leaves.
Top with nectarine slices and remaining marinade.
Drizzle with balsamic reduction and a little honey.
Decorate with edible flowers and serve.
