Turka Dal

A classic indian side dish that is more than just inexpensive and nutritious… It is completely & utterly DELICIOUS! High protein, high fibre… perfect as a main course too.
Serves 4
2.5 cups of water
1 cup dry red lentils
1 garlic clove, crushed and finely chopped
1 heaped teaspoon freshly grated turmeric or 1/2 teaspoon turmeric powder
1 desertspoon olive oil
1 teaspoon butter
1 medium onion finely chopped
1 heaped teaspoon finely chopped green chilli
1 teaspoon cumin seeds
pinch of paprika
2 medium sized tomatoes, finely chopped
handful of freshly chopped coriander
Bring the water and salt to a boil.
Wash the lentils and add to boiling water along with turmeric & garlic.
Cook on medium heat until soft and mushy & liquid nearly cooked away. Around 15-20 minutes.

In the meantime, heat oil and butter in frying pan.
Saute onion, chilli, cumin seeds & paprika.
When golden brown, add the chopped tomatoes and half of the coriander.
Cook for a few minutes.
When lentils are cooked, add the onion mixture to lentils.
Season and add remaining fresh coriander.
Leave to infuse a little.

Delicious the next day.   Enjoy with rice as main course or side dish as you please.
