Gluten Free Apple Crumble

A sumptuous dessert that will warm your heart & belly on any cozy evening.
Best of all, it’s super easy, a healthier crumble and completely gluten free.
Serves 4
6 Granny Smith Apples, peeled, cored and cut into cm slices
30 grams of butter
1 cinnamon stick
1 dessert spoon honey
1 tablespoon water

Put all of the above in a saucepan and bring to a simmer with lid on.
Remove lid and allow the little liquid to evaporate on low heat until apple is cooked but not entirely soft. Set aside whilst preparing crumble.

Crumble – I always make extra and freeze for when the sudden “must have” urge hits home.
100 grams of butter
50 grams flaked almonds, slightly bashed with rolling pin
60 grams gluten free oats
100 grams of coconut flour
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger (optional)

Combine all of the ingredients, using your fingertips to incorporate the butter.
Keep it chunky.

Spoon apple mixture into ramekins and top with crumble.
Before baking, add one teaspoon of demerera sugar on top of each crumble. This will caramelise in the oven…. SUBLIME!
Bake at 200 degrees Celcius for 15 minutes or until golden brown on top.

Serve with the best quality ice cream or cream.
