Hasselback Sweet potatoes with Salted Honey & Chilli

If there is to be a day when the mood is a little low, the best prescription and remedy, would be a helping of this humble root vegetable.  Oven roasted in a blanket of sweet comfort….  and there is nothing naughty about this recipe either!  It’s ALL GOOD!


Heat oven to 200 degrees Celsius.

Wash & scrub 6 small sweet potatoes (or 4 medium / 2 large)


Cut thin slices two-thirds  down.
Place in oven proof dish.
Prepare the salted honey/maple mixture;

1 tablespoon olive oil
30g butter
1 tablespoon honey or maple syrup
2 teaspoons chilli flakes
generous grinding of coarse salt
Heat oil, butter, honey, chilli & salt on a low heat until butter has melted.
Generously brush sweet potatoes with 3/4 of the  mixture, reserving a 1/4.
Bake in the oven for 1 hour or until soft.
Remove from oven and increase oven temperature to 220 degrees C.

Brush remainder of mixture over sweet potatoes and pop back in oven for 10 minutes.
