Quinoa, Edame Bean & Shitake Salad

I was super excited to have found fresh Edame beans in-store a couple of days ago. This salad is super easy with the dressing being the champ!
Sharp, Sweet & Spicy….. DELICIOUS!!
Serves 1 as main, 2 as a side salad
Make dressing:
80 ml fresh lime juice
1 tablespoon olive oil
1 1/2 tablespoons Tamari Soy Sauce (wheat free)
1 tablespoon Honey
1 dessert spoon Sriracha Hot Chilli Sauce
Pinch of Salt

Whisk together and set aside.

Prepare Salad:
150 ml Quinoa
300 ml boiling water
handful of fresh Edame beans
5 Shitake mushrooms, thinly sliced
1 Spring onion sprig, finely sliced diagonally

Add quinoa to water and bring up to boil.
Simmer for 5 minutes before adding beans.
Simmer further until water has evaporated. Remove from heat.
Cover pot with cloth and then lid.
Set aside to cool before adding mushrooms and adding dressing.

Top with sliced spring onion.
