Fragrant Broth with Soba Rice Noodles

Serves 1
500 ml Vegetable Stock
1 Star Anise
1 Cinnamon Stick
1 teaspoon grated ginger
1/2 teaspoon crushed garlic
1 small red chilli, pierced
1 Shitake mushroom, finely sliced
50g Soba Noodles

INFUSE all of the above over a low heat for 15 minutes. Remove from heat.
Add a dash of light soy sauce. I strained the liquid through a muslin cloth to remove the fibrous bits of garlic and ginger. Keep warm.

Bring a pot of water to boil and cook Soba Noodles for 3 minutes. Rinse under cold water.
Place noodles in serving bowl before adding stock to the bowl.

Add sliced spring onions and a dash of sesame oil.
