Cardamon, Coconut & Orange Oats

Oats cooked in coconut milk with orange, cardamon, pistachios & a drizzle of coconut nectar or maple syrup
Serves 1
160 ml Coconut Milk
Juice of 1/2 medium Orange
Zest of 1/2 orange
6 Cardamon pods, (crush and use seeds only)
1/2 cup Oats
8 Pistachios, crushed
1 dessert spoon (or less) coconut nectar/maple syrup
Add coconut milk, orange juice and cardamon seeds to pan.
Bring to near boil, reduce heat and add the oats. Stir and simmer on low heat for no more than 3 minutes or until “al dente”.
Stir in the zest, reserving a little for decoration on top.
Spoon into serving dish.
Top with pistachios, drizzle of coconut nectar or maple syrup.
Decorate with remaining orange zest!!
